Baking can be a great form of therapy, but sometimes you don’t want to indulge in what you make because of the high calories. I used to bake a lot for something to do, but I would never eat it! I ended up finding these three amazing healthy and gluten free recipes. Trust me. They are all amazing, and they all involve bananas.
For the pancake lovers.
This is such a yummy recipe. I don’t even like pancakes, but these are amazing.
Ingredients:
1 cup of oats
1 egg
1 tbsp of baking powder
1 medium sized banana
1 tbsp of honey
Pinch of salt and cinnamon
1 cup of almond milk
Directions:
Put everything in the blender and blend!
Make sure your stove is set on medium heat and use butter or coconut oil to grease a pan. When you put your batter in the pan make sure it’s about 1/4 of a cup.
For the bread lovers.
Say hello, to healthy banana bread! The best part? Easy to make, not messy, and so good.
Ingredients:
2 tbsp of honey
1/4 organic olive oil
1/4 greek natural yogurt
2 large bananas
2 eggs
1 cup of oatmeal
1/4 of almonds
1 tsp of vanilla extract
Optional: handful of chocolate chips (**Chocolate is always good)
Directions:
Set oven at 350°F
In a food processor (or blender) mix the oatmeal and almonds together until fine.
In a bowl mix the olive oil, yogurt and honey and mix until it looks like a batter.
Add bananas to the oil-yogurt-honey mixer and mash the bananas with a fork.
Next, add both eggs and vanilla extract. Now add the oatmeal and almond mix!
Bake for about 30 minutes.
For the muffin lovers.
I saved the best recipe for last. Once you try these, they will become your new favorite treat. The best part is, they are healthy! These muffins don’t have flour, butter, or oil.
Ingredients:
1 cup plain Greek yogurt
2 ripe bananas
2 eggs
2 cups rolled oats
¼ cup brown sugar
1 tbs baking powder
semi-sweet chocolate chips
Instructions:
Pre-heat oven to 400°F.
Get your muffin pan ready, make sure you use cooking spray.
In a food processor (or blender) combine everything except the chocolate chips.
Once your batter is smooth and creamy stir in the chocolate chips and pour batter into prepared muffin pan.
Bake for 15-20 minutes.
Let cool for 10 minutes and store in an airtight container.
Banana’s are an awesome substitute for many things when you bake. It can replace eggs, oil, and butter. Basically, it acts as the “fat” in a baking recipe. If you don’t like bananas, applesauce does the exact same thing!
Also, try and remember, baking is better than buying because you know what’s in it.
